Ingredients And Substitutions
These are the main ingredients and substitutions for Pumpkin Brioche French Toast. Scroll down to the recipe card for a full list of ingredients and instructions.
Use pumpkin puree not pumpkin pie filling.
You can use any type of milk or nut milk alternative. I used almond milk, but feel free to use oatmilk, coconut milk, hemp milk or even cow’s milk if not dairy free but this recipe won’t be vegan.
A touch of vanilla extract adds a lovely flavor!
Pumpkin pie spice adds a great flavor and really brings out the pumpkin taste.
A touch of maple syrup to sweeten up the mixture, you can also use honey, agave or sugar.
I used brioche bread from trader joe’s for this recipe, but any type of bread will work!
For my toppings I used yogurt, almond butter and pumpkin seeds.

How To Make
ONE: Start by combining all the ingredients together in a deep, wide bowl. Whisk until well combined.


TWO: Working quickly, dip each slice of bread in the mixture and coat both sides. Be careful not to over soak the slices of bread, just enough to cover both sides. Place the slices of break on an air fryer rack and air fry at 400F for 8 minutes.


FOUR: Carefully remove from the air fryer and top with desired toppings and enjoy!

Tips And Tricks
If food typically gets stuck to your air fryer rack, lightly coat the bottom with non-stick spray before adding in the dipped slices of bread, alternatively, you can place them on a piece of parchment paper.
Air fry your french toast until the edges are crispy and golden brown.
All air fryers tend to cook food differently, so your french toast may need a little more/less time. Watch it carefully around the 6 minute mark.
If your air fryer doesn’t reach 400F, air fry it on the highest setting and add additional minutes instead.
How To Serve And Store
Serve this Pumpkin Brioche French Toast with your favorite toppings, I personally love yogurt, almond butter and pumpkin seeds. It’s sweet enough in my opinion, but feel free to add on maple syrup as well.
Enjoy warm with a cup of coffee!
Air fryer French Toast is best served immediately. Leftovers will be soggy.

The texture is gooey and soft in the center, but crispy on the edges. Since there is no egg in this french toast, it will be softer than traditional which is why air frying is key to achieving a crispy edge.

Yes totally! I’d recommend sourdough, white, wheat or any type of bread that you prefer.
Since there is no egg in this recipe, the french toast will be softer than traditional french toast. If yours is really soft and falling apart, it may be possible that you over dipped it in the mixture, or you didn’t air fry it long enough.
