Ingredients And Substitutions

These are the main ingredients and substitutions for Olive Garden Gnocchi Soup. Scroll down to the recipe card for a full list of ingredients and instructions.

Grass-fed butter is rich and more nutritious than your standard stick of butter, but both will work. You can also use extra virgin olive oil if preferred.

For the veggies this recipe uses diced yellow onion, diced celery, fresh spinach and shredded carrots.

Freshly minced garlic will add so much more flavor than powdered garlic.

To keep this recipe gluten free use a gluten free 1:1 flour blend otherwise you can use all purpose flour.

Half and half will give this soup a creamy and delicious taste and texture. Its better to use instead of milk because it tends to reheats better. However, you could swap for heavy cream for a more rich flavor.

I use a combination of water and bone broth concentrate to create my own chicken broth. However, you can simply use chicken stock from the store if desired.

Garlic powder, onion powder, salt, pepper and dried thyme are all the seasonings in this soup. You can use fresh thyme if preferred but I wouldn’t recommend swapping out any of the other seasonings.

To keep this recipe gluten free I used the cauliflower gnocchi from Trader Joe’s. You can use regular pantry staple gnocchi, or make your own from scratch.

Rotisserie chicken keeps this recipe quick and efficient. I just grab a package from my local grocery store, remove the skin and cut the chicken into cubes.

I like to put parmesan cheese both in the soup and grate it on top before serving.

How To Make

ONE: Saute the onion, celery and carrots in butter or a few minutes.

TWO: Then, add in the fresh garlic and gluten free flour and mix until veggies are well coated.

THREE: Add in the half and half and mix well. Then, add in the chicken stock and seasonings and mix well. Bring mixture to a boil.

FOUR: Once boiling, add in gnocchi, chicken and spinach and let simmer for about 6-8 minutes. Mix in the parmesan cheese and serve warm with more parmesan cheese.

Tips And Tricks

Prepare your onions, celery and carrots before you start making this meal.

Use rotisserie chicken for ease! This will keep this meal under 30 minutes.

I love to use water and a bone broth concentrate I love that you can control the flavor by doing this.

Use frozen cauliflower gnocchi from trader joe’s or any refrigerated or shelf staple gnocchi.

How To Serve And Store

Serve this Olive Garden Gnocchi Soup warm and with a touch more of freshly grated parmesan cheese. I like to serve it at home the same way I eat it Olive Garden, with fresh warm bread and a green salad.

You can bake up some breadsticks, garlic bread, or just a plain warm crusty bread. This soup is so hearty and filling on it’s own though.

Store in an airtight container in the fridge and enjoy up to 4 days. Reheat on the stove top or in the microwave. You can also freeze this soup in the freezer for a couple of months when stored in an airtight container. Thaw the soup in the refrigerator overnight.

Taste And Texture

This Olive Garden Gnocchi Soup has a rich, creamy base and is loaded with soft pillowy cauliflower gnocchi dumplings. It’s warm, cozy and comforting.

The texture is thicker than broth but more liquid than a calm chowder, it’s somewhere in the middle.

Ingredients

  • 4 tbsp grass-fed butter
  • 1 yellow onion, diced about 1.5 cups
  • 1.5 cups diced celery, 1 whole stalk
  • 1 cup shredded carrots
  • 6 cloves of garlic, minced
  • 1/4 cup 1:1 gluten free flour blend
  • 2 cups half and half, can sub coconut milk from can
  • 32oz water + 4 tsp bone broth concentrate or just chicken stock
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 16oz frozen cauliflower gnocchi, I used Trader Joe’s
  • 2 cups cooked chicken, I used rotisserie chicken
  • 2 cups fresh spinach
  • 1/3 cup freshly grated parmesan, inside soup
  • Parmesan cheese for topping

Directions

  2. Next, add in the freshly minced garlic and gluten free flour and mix until veggies are well coated.

Randomly came across this recipe on Instagram and had all the ingredients already including the Trader Joe’s gnocchi. This recipe was a hit at my house and I foresee it being added to our weekly rotation. So hearty and delicious.
